Breakfast Burritos

INGREDIENTS
Breakfast salsa:
1/2 cup chopped scallions
1/2 cup finely chopped cilantro
3 ripe tomatoes - diced
1/4 cup fresh squeezed lemon juice
1 red bell pepper - minced
1 tablespoon white vinegar
2 teaspoons peanut oil
Frank’s Red Hot Sauce (to taste)
Sea salt and coarsely ground black pepper to taste
2 tablespoons olive oil
4 large eggs
4 flour tortillas
2 tablespoons olive oil
4 large eggs
4 flour tortillas

Garnishes:
Grated Monterey Pepper Jack cheese
Sour cream
Chopped fresh cilantro
Red hot sauce to taste

DIRECTIONS
Fry eggs sunny-side up in hot olive oil.
Warm tortillas in microwave between paper toweling for just a minute - or until heated through.
Place 1 tortilla on each plate, put 1 egg on top of each tortilla, and spoon 1/2 cup of the salsa around each egg.
Garnish the burritos with the grated pepper jack cheese, sour cream and chopped cilantro. Season with red hot sauce to taste.
Serves: 4
