Green Pea Salad

INGREDIENTS
2 10-ounce boxes frozen green peas, steamed till tender
3 tablespoons chopped fresh dill

Dressing:
2 tablespoons sour cream (or more to taste)
2 tablespoons mayonnaise (or more to taste)
Freshly squeezed lemon juice to taste
Fruity olive oil to taste
1 teaspoon Dijon mustard
Sea salt and freshly ground black pepper to taste
Few drops Frank’s Red Hot Sauce to taste

Garnish:
Dill sprigs

DIRECTIONS
Mix the peas and dill and set aside. Whisk together all remaining ingredients. Add about three quarters of the dressing to peas and toss lightly. Cover and refrigerate.

To serve:
Correct the seasoning and mix in the rest of the dressing. This may be made several hours in advance. Garnish with a sprig of fresh dill.
