Roasted Italian Sausages, Yams and Onions

INGREDIENTS
2 lb Sweet Italian sausages – cut into large chunks
2 lb Hot Italian sausages – cut into large chunks
2 lb Yams – washed – unpeeled and cubed
2 lb Red skinned potatoes – washed – unpeeled and cubed
2 lb Idaho potatoes – washed – unpeeled and cubed
2 lb Red Peppers – cut into large chunks
2 lb Yellow Peppers - cut into large chunks
2 lb Carrots – peeled - cut into large chunks
4 Large Vidalia onions – peeled – cut into large chunks
1 head of garlic – left whole
Extra virgin olive oil (just enough to lightly coat the vegetables)
Fresh sea salt and freshly ground black pepper to taste

DIRECTIONS
Preheat oven to 350 degrees.
Combine all of the vegetables in a very large roasting pan and season with salt and pepper to taste. Bake the dish, uncovered, for about 1-1/2 hours or until the vegetables begin to caramelize slightly. The sausage should be cooked through.
Serves: 10 - 12
